Back At It

 





I had fallen out of love with planning. Unhappy with my MAMBI Happy Planner and unable to find another planner that inspired me, I stopped planning. I watched reviews on YouTube and kept up with my favorite Etsy sellers on Instagram. But I couldn't find that one thing that made me want to get back at it.

Skip ahead a few weeks to my 30th birthday and a very generous friend who gifted me with the Simple Stories Carpe Diem Planner. She made the dividers, filled it with monthly and weekly inserts, and stuffed the pockets with inspirational cards and fun trinkets.

My first two weeks in this planner have been experimental. I'm unsure how I want the weeks to look and I'm still playing with the horizontal layout.

I am a list maker and I found these lined pages to be perfect for my listing tendancies and perfect for a little decorative touch.

This week I used a kit from Planner Society. I believe this was part of their monthly subscription box and was also generously gifted to me by my beautiful friend. I love that the flags provided perfectly cover up the days of the week. I also found that the page flags, checklists, and embelleshments perfectly fit the spaces provided in this planner.

I am back in planner mode and already filling my Etsy cart will all sorts of stickers for my Carpe Diem planner! I hope to have a sticker haul for you all soon!

February Favorites


 
With the close of another month, I thought I'd
share a few of the products that I have been loving in February.
 

Aveeno Skin Relief Handcream - I've had this handcream for a few months but found myself consistently reaching for it this month. It is very hydrating without leaving behind a greasy feel and does not have a perfum-y smell. This is a bonus in an office setting where a strong handcream can be overwhelming to those around you! 

Origins Refreashing Scrub Cleanser - Origins is a new brand for me and the scrub cleanser is the first product from the line that I have tried. I am now hooked! Since it is a gentle exfoliator, I have been using it every morning. It has a light citrus scent that is perfect as a "wake me up"!

OGX Kukui Oil Conditioner - I have used OGX hair care products in the past but recently discovered the Kukui Oil Conditioner. I have curly hair that frequently requires an instensly moisturizing conditioner and this one fits the bill. It leaves my hair feeling very soft, hydrated, and smelling amazing!

L'OREAL Infallible Pro-Matte 24hr Foundation - I feel like i'm a little late to hop on the Pro-Matte band wagon but I am glad I finally made it! This foundation is my favorite thing in my makeup bag! It goes on the skin smoothly, is buildable, and keeps my skin matte throughout the day.

Red Velvet Cupcakes




 

Have I mentioned before that I love to bake? Well I do! So I used Valentine's Day as an excuse to whip up a batch of red velvet cupcakes with cream cheese frosting!
 
I've never made red velvet cupcakes before but was eager to give it a try. During my recipe research I discovered that there are two ingredients that are unique to these cakes; buttermilk and vinegar. Some recipes call for white wine vinegar while others call for distilled white vinegar, but all recipes use it in some form. These two ingredients give this desert its trademark tang, so it's important you have these on hand.
 
I also found varying recipes for the cream cheese frosting. I decided that, in this instance, I wanted a frosting that tasted a bit more like cheesecake and was not as sweet. If you want a sweeter frosting, just add more powdered sugar until you reach the desired taste!
 
As you might be able to tell from the photos, my cupcakes came out a little less fluffy than I was hoping. It turns out that my baking soda is a little old and did not react the way it was intended to. So today's lesson is to always check your ingredients!
 
With all of that said, they are still delicious and helped to make our Valentine's date at home a little more special!
 
 
 

INGREDIENTS:

For the Cupcakes:
4 tablespoons unsalted butter, at room temperature
¾ cup granulated sugar
1 egg
2½ tablespoons unsweetened cocoa powder
3 tablespoons red food coloring
½ teaspoon vanilla extract
½ cup buttermilk
1 cup + 2 tablespoons all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
1½ teaspoons white wine vinegar
For the Cream Cheese Frosting:
4 ounces butter, at room temperature
4 ounces cream cheese, at room temperature
2 cups powdered sugar
1½  tablespoons vanilla extract

DIRECTIONS:

1. Preheat oven to 350 degrees F. Line a standard muffin/cupcake tin with liners.
2. On medium-high speed, cream the butter and sugar until light and fluffy, about 3 minutes then add the egg. Scrape down the bowl and beat until well incorporated.
3. In a separate small bowl, mix together the cocoa powder, vanilla extract and red food coloring to make a thick paste. Add to the batter and mix on medium speed until completely combined.
4. Reduce the mixer speed to low and slowly add half of the buttermilk. Add half of the flour and mix until combined. Scrape the bowl and repeat the process with the remaining milk and flour.
5. Add the salt, baking soda and vinegar. Beat until smooth.
6. Divide the batter evenly between the cupcake liners and bake for about 20 minutes, or until a thin knife or skewer inserted into the center comes out clean.
7. Cool for 10 minutes and then remove cupcakes from the pan and place them on a cooling rack to cool completely before frosting.
8. To make the frosting: Using the whisk attachment, whip the butter and cream cheese on high speed for about 5 minutes, scraping the bowl down as necessary. Reduce the speed to low and slowly add the powdered sugar until all is incorporated. Add the vanilla and mix to combine. Increase the speed to medium high and whip for a few minutes until the frosting is light and fluffy, scraping the bowl as necessary.

Plan With Me - Valentine's Day


This beautiful kit came to me through a January mystery box that Plan It Pretty and Let's Plan It collaberated on. The petal pinks, sky blues, and pale purples are perfect for the week of Valentine's Day. 




Spring time is just around the corner and the subtle floral print helps me to forget all about the freezing temps outside!

Plan With Me - How I Plan












It's been a few weeks since my last PWM. I was away on a business trip and did not take my planner with me. There really was no time to plan or do anything but work! So most of January is blank :-(

But for this week I decided to show you my step by step process on how I plan. I am really loving kits right now. It cuts down on my need for extra icon stickers plus I know that everything will match!

Most of the stickers that i've found on Etsy are formated for the Erin Condrin vertical life planner. Since I use the MAMBI Happy Planner those stickers don't fill up all of my white space. Now this usually does not bother me but I am always excited to see a kit that is formated for my HP!

The kit I am featuring this week is from Let's Plan It and fits my Happy Planner perfectly! Even though the pattern is floral, the cool gray and red tones make this a perfect kit for February.


Let's Plan It - Lovely Floral for MAMBI Happy Planner





I start by removing the weekly pages from my planner to give me a little more room to work. The weekly kits from Let's Plan It include a side bar checklist as well as 8 full boxes. I start by placing these down. I don't worry about a side bar if there is not one included but I appreciate having the space for a running checklist or list of reminders for my week.




Next, I go in and add my checklist, morning/day/night header coverups, and weekend banner. I also add any daily trackers for meals and water intake. These water bottles from Let's Plan It are some of my favorites!



 
This week I decided to add in some excersise reminders. I pulled this sheet of sneakers and dumbells from a recent Etsy haul. These are from The Organizing Companion.

 
 
At this point I am pretty much done with my spread. All that is left for me to do is go in and add any special events, daily tasks, or appointments I need to keep track of. This is when I use the added icons that these weekly kits come with. I love the way that this week looks! It's clean and easy to read but also decorative and feminine.

Reflections

Around this time 10 years ago, my winter break from college was coming to a close. I was single and had a huge crush on the cute boy that worked at the mall. As an excuse to stop by, I made some cookies over break and packed up a small bag just for him. I made the trip to the mall, giving him the homemade cookies, and my instant messenger user name. We did a little flirting online before he finally came to my dorm to hang out.

10 years later this boy is now my husband and doggie dad to my fur baby. There have been many ups and downs, countless tears, and hours of laughter. As I reflect on these past 10 years I cannot imagine anyone else by my side. He has rejoiced with me in the triumphs and held me close during the heartaches. We have had serious debates about the various political canidates and major world events. We have acted like teenagers in love, tickling eachother and holding hands in public. He is my rock; my support system; my cheerleader; my best friend.

These past 10 years have not been a walk in the park, but I would walk through the fire again as long as he was by my side.

Plan With Me - The Paperly Boutique


I'm a little late getting this post up with week. But...
My PWM this week uses a new-to-me Etsy seller - The Paperly Boutique. I was attracted to the muted green and taupe colors of this kit and the simple, functial stickers. As we start the new year I am looking to be more organized and proactive with my planning. This kit offers a wide range of funtional stickers, m/d/n headers, page flags, and event markers. These repositionalable stickers are high quality and the price is great for the amount of stickers that come in the kit. I would highly recommend this etsy seller to anyone looking for weekly kits!
